I've made about 5 batches of vegan mayo but have never gotten it quite right...until today! This recipe is based off one I found on recipezaar.com but I've tweaked it a little. Whether you want to cut out animal products or just enjoy mayo w/out the cholesterol, this is a great recipe to have.
1/2 cup soy milk
1 cup + 2 tablespoons safflower oil
3/8 teaspoons salt
1/2 teaspoon dijon mustard
1 1/2 teaspoons apple cider vinegar
1. Combine all the ingredients except the apple cider vinegar in a blender; blend until smooth.
2. Slowly add the apple cider vinegar while the mayo is blending.
